I keep crab leggs up to a week . i can't eat them fresh they need to be at
least 24 hours old ( they are bland and the meat stick to the shell. The
leggs must be removed from the main body because the organs spoil very
quickly .
Once ripen they are a delicacy and the meat come easy from the shell.
Boiling it is a waste in my opinion ( doesn't have to be yours) it taste so
much better raw. The only limit to keep them is that the meat dehydrate
inside the shell and you are left with nothing especially in the thin legs .
(so generally when i go fishing for crabs, after letting them ripen for a
day i eat the thiner part of the legs 1st, and the part of the body exposed
to the air. and i leave the thicker part of the leggs and claws for an other
day in the following days. One day to ripen in the fridge is not enough for
me so generally i let them out of the fridge if i want to eat them the next
day of fishing. the part of the organs that is brown orange color on the
sides of the main shell is at time very delicious to me.
bon appetit Mary try a bite raw.
