I have harvested dead deer days after death ( in fall or winter times )even
one that was half eaten by eagles.
as long the meat is not invaded by maggots it is fine to me .
Once a young deer died on his own in my barn ( it happens every winter ),i
cleaned it hung it but have never been to find the smell attractive so never
ate it.
same with a beaver found on the road.
So basically because i eat instinctively anyway the answer is allways clear.
If it smell good taste good i eat it.
