Belgian is best.  My Dolfin order arrived today.  My favorite is the 88%.
Unbelievably smooth for a "bitter" chocolate.

I used to eat Belgian 99% chocolate drops. 99%
chocolate and the rest cocoabutter and sugar. Belgian
chocolate is kneaded for several days longer then,
say, French, so 99% is quite palatble  - very forceful
though! - and not so bitter as other pure chocolate.
Unfortunately my favourite shoppe is unable to get
them anymore.
