Free range chickens are good but pastured are better. The farmer who sells
me grass fed beef raises chickens and eggs too. The chickens are allowed to
roam in the pasture and eat grass, worms etc. However, he puts movable
fences with wire roofs over them because otherwise predators get them. He
supplements about half of their calories with grain, because otherwise they
are just too scrawny. The eggs are delicious - loaded with flavour and with
orange yolks. The chickens are huge. He says that commercial chickens
cannot get than big because they get no exercise and their legs would break
with their body weight. The chickens are incredibly flavorful - like the
organic chickens from Whole Foods but even more flavour. I can't get the
eggs too often because he is 2.5 hours away. Oh for a source of pastured
eggs in Toronto. Ken
