I'm looking for reliable sources of fatty acid information in various meats
(ie how much saturated fat vs polyunsaturated fats etc).  Is there a source out
there that one can access via the Internet that is considered fairly
reliable?

If animals make saturated fat from the carbs they eat (ie grain fattened
cattle, etc), how is it that pork in this country contains more polyunsatured fats
than say corn-fattened beef?   Anyone know what pigs are fed here that makes
their fat more polyunsaturated?  I should know this -- I'm from Nebraska!
