Hi Tom:

Question:  I have never eaten any organ meats. I was raised on the SAD of wonder bread and bologna. 

What do you recommend as a beginning point for organ meats? I am afraid of them (taste and texture). 

Also, what is the best type of meat raw?

Raw meat is pretty easy to eat. Cooking actually makes meat tough. Our front
teeth are nicely designed to nip off bits. I don't eat a lot of raw meat,
but have no problem with the idea.
