If you get fresh pork side there is nothing added. It doesn't taste much
like bacon, but you avoid all the sugar, salt, and chemicals. Health food
stores do have some without chemicals, but they will either have lots of
salt or maple sugar. You have to use something to cure it.

As discussed before, a Chinese supermarket is the easiest place to find
fresh pork side. I now have a source of free-range, no hormones, no
antibiotics fresh pork side. Specially packaged for me. I'm paying
$3.69/lb. and it's boneless, rindless, sliced, and not too much fat.

Next is to start eating more free-range chicken. On Saturdays I can now get
whole ones for $2.99/lb. Slaughtered one to two days before.
