I use pureed vegies to thicken my gravies otherwise I use egg yolks (mix into cold stuff before heating and stir constantly) for other things (like my white sauce - which is Almond milk, egg yolk and herbs/spices depending on what I am using it for).
Arrowroot is not really paleo (being a tuber) but some people use it as an accepted alternative. I used to (when I first became paleo, but found it made sauces very gluggy/glue-like.

Subject: sauce thickener?

I was wondering if there is a paleo-friendly sauce thickener? I'd like to
avoid flour and cornstarch, but I also miss having thick sauces that cling
to my meat and veggies. Does anyone have any suggestions for a
replacement?Thanks
so much,
Charlotte
