>we would be playing God

But, we've already done it. Nobody is accused of "playing God" when we
create new "versions" of dogs, cats, and other domestic animals. Or when we
breed different strains of plants together. Or when we grow larger than
normal pumpkins, squashes, etc. Or when we graft one species of apple tree
onto another species of apple tree.

Why would modifying the carb level in potatoes suddenly be considered
"playing God", and yet we can accept all the interventions we've made in
the past as just a part of life?
