Tom, I understand your feelings about organ meats.

Of all of the original foods, I find that bone marrow is the most
delicious and least objectionable. Other than eggs, bugs, and occasional
small prey, it is also the first animal-based food our ancestors adopted.

I buy a beef or pork thigh bone (readily available in most grocery stores)
and ask the butcher to slice in into one inch pieces.  I add the bones and
some cubed meat to a big pot of water, bring it to a boil, and skim the
foam. Then I add slices of fresh ginger and a pinch of salt, turn down the
heat, and simmer it for an hour. Finally, I add fresh broccoli or spinach.
When the vegetables turn bright green, the soup is ready. I have served
these soups to many different guests, and never had any leftovers.

Does anyone have any info on the nutritional content of bone marrow?
