I think it *is* a function of caloric intake, plus a function
of body's requirements and ability to burn.
Body's requirements increase by (old fashioned) exercise and
thyroid activity.
The latter and the ability to burn should be enhanced by proper
micronutrient supply.

In addition insulin resistance promotes fat gain and
can be reduced in it's effects by
choosing fat before carbohydrate as main fuel.

I think fat is the normal body reaction to handle *calories*
which can't (or needn't) be used at time.
Calories can't be excreted.

Many have reported that allergies (hidden or not) on food proteins
result in increased fat gain and vice versa.

Many grains are at least problematic. They are the calories and proteins
which are easiest to produce and store, but not easy to digest.
And allergies on some frequent used grains are frequent.
