Plant roots, whether tubers or bulbs, were apparently
used in their diet. They were probably much lower in carbs and starch
than todays cultivated white or sweet potato.

Looking at it from a low carb perspective, I
stick to the so-called "potato alternatives" like jicama and turnip.
