I think the issue is whether the olive oil is any good or whether it is
tainted or otherwise damaged from the heat and packing process, and
therefore water-packed would be better.

BTW, why do you get the boneless/skinless sardines? These have a lot of the
good stuff removed and have much less available calcium and omega 3 oil than
the ones that are not boneless/skinless
