Raw, it is kinda yukky..
Yucca is one of the components of a Latin American soup or sopa. Each
country in the South American, Central American and Caribbean area has its
own version of San Cocho. There are many recipes for this on the Internet
if you do a search and any kind of meat may be used as the base. The one I
am most familiar with is San Cocho de Pollo or chicken (one of Colombia's
versions). The chicken is simply boiled and local vegetables such as
platanos, choclo (corn), yucca and herbs are added. The most predominant
herb is cilantro. A fresh salsa is always served on the side.
Another recipe I have had using yucca is from El Salvador. Fries are made
out of the yucca and they are served with dried sardines and salsa for
dipping.
