Only the, to me, reasonable assumption that we evolved to fit a niche which
did not include cooked proteins. Just because some tribe or society "does
fine" on cooked foods does not IMO mean they are biologically optimal. I
see this all the time with dogs and wolves; they can exist on garbage and
cooked, but there is no question they are evolved as carnivores who eat raw
and do better that way. We are evolved as H/G's who were designed for raw,
and I think that for every "cooked" protein we ingest in quest of some
particular nutritional fraction, there is likely a downside in the overall
health of the digestive tract and all the other systems.

This is not to say I eat everything raw, incidentally:) In another world,
I'd like to.
