Most of those references you found are for neolithic coprolites. There
are not nearly as many Paleolithic coprolites, but there are some (even
dinosaur coprolites have been found and analyzed). A much greater bulk
of evidence comes from observations of hunter-gatherers in the 20th and
21st centuries.
