You do not need to avoid saturated fat and cholesterol.  In fact, if you
don't get enough dietary cholesterol, your body will start producing it and
when that happens, it doesn't know when to quit.  That's how people end up
with too-high cholesterol levels.  Mother's milk is very high in saturated
fat and cholesterol.  These are nutrients essential for survival.

You said you're frying a lot of mushrooms.  I hope you are not using
polyunsaturated fats to cook with.  These oils must not be heated, or they
become damaged and carcenogenic.  Also, make sure you buy only cold-pressed
oils.  The only vegetable oils I use are olive, coconut, and flax seed.  I
cook with olive oil oil and coconut oil (monosaturated and saturated,
respectively), and use flax seed oil on salads because it's high in omega-3
fatty acids.

Much of what the US dietary establishment has told us about dietary fat in
incorrect.  You don't want to eat an excessive amount of fat if you're trying
to lose weight because fat is calorically dense, but as long as it's not
hydrolized or damaged in some other way, it's not bad for you.
