Wash it well, and simmer it for a couple of hours with a soup bone or two
to add flavor. Once it's tender, you can add vegetables and spices to make
it interesting. Unfortunately, most of the really great tripe recipes
include nightshades like tomatos and peppers, or soy-based Asian products.
Try for something spicy, though. Sorry to not be of more use...
