Organ meats are every popular with some ethnic groups.
Try to find a Greek butcher (just ask some middle aged Greeks), they are
sure to have loads of organs. We have some really excellent Greek butchers
in my area in Sydney. Greeks are very fussy customers, so if it is busy, it
will be very good meat, IMHO.
