Almost all the nuts on the market are dried at high temperature specially
coming from big production units. nuts come in a husk that need to be
removed and for some nuts it means hot water bath plus drying at high
temperature ( higher than the 40 degres celsius that is the gate to death
for most of life forms on earth). it just make sense economicaly to use
those process and to do it the quickest possible. As small farmer and
producer of walnuts and filbert i can tell you that it is a lot work when
done by hand. So except the few original like me  who believe in quality
over quantity, most of the nuts ( organic is the same) must be processed
efficiently and it often means heat.
i don't know what they mean by cold shelled because to shell nuts per se ,
no heat is required but is done i think  thru mecanic cracking. I know one
exception it is the pistachios which are heat treated to split open the
shell so they can be easely shelled by the consumer.
Anyway nuts that are sold shelled are rancid because the oil oxydise in
contact whith airvery quickly. even in the shell they are often rancid
because  old or because of the washing of the shells with chlorine or other
goodies that make them porous to air.
It is enough to taste once a nut that is freshly dried at low temperature
 at ambiant temperature) to know the difference with the rancid ones .
I have still some walnuts to sale so if you are interested to taste the
difference contact me. I don't have filberts for sale ( i keep them for us)
but could send you a sample, and will be happy to exchange more for an other
kind of nuts that might grow in your aera and have been kindly treated.( i
will love to find a source of really raw in shell pistachios, pecans,
peanuts or pine nuts.)
nuts have a bad reputation because of the unavailibility of quality ones.
