All oils are a mixture of fatty acids -- even the so called solid fats
have mono and polys of different lengths in them as well as saturated.
In fact some fats such as chicken fat and lard have a very large amount
of oleic fatty acids the monounsaturated almost touted as a wonder drug
in olive oil. Mar Enig (noted for her work on trans fats) wrote a very
information book on fats called Know Your Fats -- The compolete primer
for understanding the nutrition of fats, oils and cholesterol.
