Here in Seattle I've found two brands:
 - Hempler's uncured bacon, which just has salt and
honey added.
 - Beeler's, which has salt, honey, and beet extract.

I've seen both at PCC (Puget Consumer's Co-op),
Hempler's at QFC (now Fred Meyer, so who knows), and
Beeler's at Whole Foods.

I prefer Beeler's - it tastes better and the beet
extract gives it a nice pink color so it resembles
regular nitrate bacon.
