I might actually desire the insulin elevation (at my infrequent
carbload-meals).
Following the rationale of  the NEH-diet ,  insulin is a "muscle-building"
hormone-
therfore intermittent (infrequent) (NOT CONSTANT !) high insuline is
benificial.

So  I will still eat white potatoes   -  not least because I  love to dig
them up
in my garden  -  it feels much  better  (more "paleo" perhaps  ?)
than buing a sweet potato,  from the other end of the world.
