Yes.  Simply check the label. They are more polyunsaturated than saturated
or monounsaturated.  The only fat that is stable against rancidity is
saturated.
There is a great book about fats written by someone by the name Enig(sp).
Someone else in the group will know the book.

Another thing that I do that others may do is when I open a bottle of  olive
oil I squirt a capsule of vitamin E into the bottle to prevent excessive
oxidation.
