As I mentioned before, I recently learned that gluten is a globular, rather
than fibrous protein. This makes sense since the villi that are damaged in
celiac disease contain globular proteins. There does appear to be at least
one fibrous food protein, however: glycine-rich cell wall protein (GRP)
[though a Wikipedia article claims that there are no fibrous food
proteins--but it doesn't give a reference, so I am discounting that for
now]. GRP, like gluten, is implicated in autoimmune diseases. While I didn't
have all the details right, the basic linkage of modern food proteins with
autoimmune disease through molecular mimicry still holds and I still think
that dietary molecular mimicry is probably the most crucial prediction of
evolutionary nutrition and the most important area of research in
evolutionary medicine.

I revised my report on the subject, but rather than post the whole thing
here again I posted it at my blog

since it didn't generate a lot of discussion here. If anyone notices any
remaining errors or is skeptical of anything in the report, please let me
know. I want to get my understanding of this issue clear because I think it
is a crucially important one that will have big impact on science and
society in the near future.
