I've been cleaning the basement on and off all summer, sorting through a life-time of photos, books, etc.  Found a small book called, "Harriet Roth's Fat Counter."  Just for laughs, I pulled it out of the trash and read, "...you absolutely must FIGHT THE FAT."  Her premise is - don't count calories, count fat and eliminate most fat from your diet.  Boy, do those days seem long gone.

I flipped through the book and stopped at the section on meat.  Along with fat grams are listed cholesterol.  The amounts of chol. in organ meats, especially brains, amazed me.  For example, 3 oz. of broiled flank steak has 60 grams of cholesterol, 3 oz. of simmered brains has 1,747 grams.  

Included in the book are chol. and fat amounts in heart, kidney, liver, thymus, tongue, tripe, pancreas.  Geeeesh.  Other than tongue and tripe, the chol. amts. are very high.  I know that the paleo WOE does not include counting calories or fat grams.  But, does anyone think twice about eating organ meats due to their high cholesterol??  

I can see where hunters could walk long distances, stalk prey, run, etc. and then eat brains.  Do you think the "gathering" part of the society ate as many organ meats as the hunters?
