I agree!  Just air dry the meat.  It's a much longer process but worth

I don't think that's true. My dehydrator ("The Big 1") doesn't get that
hot. That's cooking the meat, which many people don't want to do. It
probably comes from the manufacturer's lawyers not wanting to get sued
for making anyone sick.
