It is remarkable, isn't it, what diet can do for the worse in a short time.

And for the better?  I'm thinking of human-types here.  Atkins, the Eades,
and paleo-proponents all make a point of how human chemistry changes rapidly
for the better within a few weeks in most people (though it can take several
months in some) when the diet is improved.  No argument there.  And how it
reverts to worse when returned to a SAD diet.  "You are what you eat" has
some genuine immediacy.

Makes me think it's entirely possible that a cow that has received some
grains as supplemental food to a grass/hay diet might be fairly easily
rehabbed (since human studies are an indicator) by being returned to a
grass-only diet.  Would love to see some assays to prove it.
