Lately I have been making huge batches of chicken pesto and
taking containers of it to work each day.  I just grill the
chicken, cut it up into small chunks, and then mix in the pesto.
The pesto is just olive oil, basil, and ground pine nuts, but I'm
sure there are lots of variations.  I don't use that much pesto,
just enough to keep the chicken moist.
