No we "store" our pemmican on top of the fridge.  Due to it being rendered suet
and dried jerky it can last this way for years.  Except in our household where it
only lasts for days .... then we make more. ;-}

We have got beef fat from the grocery stores before (they were even nice enough
to grind it for us).  Fat works just as well but the suet we get from our butcher
is the kidney fat from the cows butchered there.  The thick, hard white fat is
what you are looking for.  It melts easy and is very tasty.  We do not get
organic either due to lack of it and costs.  Whole Foods prepares their meats
somewhere else and therefore do not have suet on hand but at times has trimmed
fat on hand.

Personally, we loved pemmican from the first time it hit our mouths.  Dakota
began eating it when he was 9 months old and he eats it like it is going out of
style. ;-}  Other people we know taste it and do not like it.  They are not
willing to acquire a taste for it.  Then again, we have been eating raw beef for
a while also and loved it from day one too.
