Chunk up some fatty pork, fry it, then when the pork is done, throw in
the sliced up heart and pot a top on the pan so it steams till it looks
done. Usually use lots of olive oil when frying. Recently I have been
using a lot of hot indian spices and cumin so it tastes like chili.
Sometimes eat it pretty bland, depends on how I feel that day. I make
up several pounds at a time in a big fry-pan, so it lasts about two
days. Beef heart is about the same. I like beef heart better but can't
find it now, and pork heart is the cheapest meat in town.
