I found this fascinating explanation of why pork is forbidden at
http://home.aol.com/lazera/archive/mitzvos.html:

"The prohibition against eating pig meat is mentioned in Leviticus 11:7
and Deuteronomy 14:8. The pig is not unique in being prohibited. As you
can see just by reading through these chapters, the overwhelming
majority of animals are forbidden (as are most birds, fish, and
practically all insects). Only animals that chew their cud and have
cloven hooves are permitted. The pig is specifically mentioned,
together with the camel and two other animals, to teach us that even
though it has one of the two necessary traits it is still forbidden.
There is no difference between the prohibition against eating pig meat
and the prohibition against eating horse meat, dog meat, camel meat,
rabbit meat, or any of the other thousands of non-kosher animals.
Probably the reason the prohibition against pig has received so much
attention is because it is the only major meat source used in the
Western world which Jews are forbidden from eating (cows and sheep are
permissible if properly slaughtered)."

In Romans 19:14, St. Paul dismisses these dietary prohibitions.
