I guess it's both. If you have to cook it for it to be edible, the
educated guess goes that you haven't adapted to it completely, since we
haven't had cooking/food processing techniques for too long. However,
cooking also changes the character of the food and thus has potential
for exposing us to something we have not adapted to. Most people
here who limit cooking do it to preserve nutrient content and not
to limit the formation of possible foreign compounds.
