You can make a delicious  cold sweet soup with raw rhubarb (for dessert) .
White or rosé wine and some water  is cooked with sugar, honey and vanilla. 
This is poured over thinly sliced rhubarb - and left to cool. Fresh mint can be added. 

I like to eat raw rhubarb stalks  (in small quantities) early in spring , 
this is the first "fruit" in the garden.
