I see that you are using the term "traditional" in regards to soy use.

The only "traditional" uses (dating for over 3000 years) for soy are Temphe and Miso(fermented soy). Tofu is just mushy soy beans.
Soy sauce is "traditional" however it is not a food, it is a sauce.

With the soy sauce you need to be careful because most manufactures use wheat in their fermentation process to make soy sauce. Not "traditional" however gives it more flavor that us westerns like better.

As for the rest of the soy industry, the Asians figured it out over 3000 years ago....you DO NOT EAT soy any other way!! Only eat soy as Temphe and Miso. To do any other way will be detrimental to your health, short term for some, long term for others.

If I eat any soy products that have not been fermented like the Temphe and Miso, within 1 hour I am sick with stomach cramping, nausea, heart palpation's. I have to go to shower and then bed. When this happens, I take some digestive enzymes to help me so that I can be as comfortable as possible until it passes.

I can eat Temphe and Miso without any problem. Very tasty stuff!!!!

For those who can't feel the problems that soy causes them have the issue with long term health problems. Unfortunately, they continue to eat soy products because of lack of concern with it or just laziness.

Just stick with a good home-made-chicken stock.
Last thing you need when you are sick is the suppressive actions of UN-fermented soy in your system.
