I have a dual pump espresso maker also .... love it. AFAIK espresso coffee refers to the grind. You can grind and choose what you want to be espressed. Use the wrong grind , amount or compression  you will loose the wonderful 'crema' that makes all espresso so special.

DYK  ..............  on the list of  bad things for a paleo eater, or anyone for that matter,   the first item is unfiltered ( meaning paper filtered ) coffee. But I remember hearing  about  this
40 or more years ago  from the Surgeon General I think ?.

I use an espresso maker.
I don't necessarily use espresso coffee, usually a regular blend.
The metal container holds a couple of tablespoons of grounds and steam
is forced through them into the cup.
Nice piping hot, quick, strong and very easy to clean up after.
No paper filters, etc.

I was depressed last night so I called Lifeline.
I got a call center in Pakistan.
I told them I was suicidal.
They got all excited and asked if I could drive a truck
