10 oz. of meat is not much for a good-sized person.  I eat that much
each day and I'm
quite sedentary and a woman well into middle age.  You could easily eat
4-6 oz. each
at 4 meals per day.  How about eggs?

Butter is borderline paleo; olive oil is "paleo" to most of us.
Potatoes are off-limits
to most, but sweet potatoes are in (edible raw).  Winter squash and
pumpkin are
ok, as are carrots, beets, turnips, etc.  Tomatoes fit the "naked with a
sharp stick"
test, though some try to avoid New World foods.

I can't give examples of what I personally eat that is over 2500
calories a day, since that would
be too much for me.  But my suggestion is to eat more meals, a little
more meat, eggs,
twice or three times as many servings of vegetables and have some of them be
the root veggies, add fresh salads with olive oil dressing, skip the
juice altogether,
and eat a variety of fruits instead of just bananas.  If you're doing
heavy exercise
or weightlifting, 5-6 of those meals a day would not be too much.

And I think you're right; if you go to a dietitian they'll have you
eating 11 servings of
grains per day and one serving of meat.  If you don't have insulin
resistance now,
you'll get it after a few years of that diet.

It's better not to obsess too much about calorie count anyway; if your
weight is
where you want it to be, and you're strong in your workouts, that's what
matters.
