I was just wondering because I fasted last year but broke with veggies I
think. Say someone fasted with clear broth and water for 21 days? Maybe eggs
and coconut oil? Small amounts then add gradually?

How long did you fast for?  I have fasted for 10 days and I jumped right
back in with chicken.  Whether that was smart or not, I have no idea.  I
imagine that if you fasted for longer then that, it might be harder to start
with something so dense, but it was no sweat after 10 days.
