Have you read the Ward Nicholson interviews at
beyondveg.com? They discuss this issue at length.

Adapt, in this case, is a pretty strong, and probably
a not very accurate, word. According to the research
cited in the interview, certain Mediterranean peoples
may be "slightly" better adapted to grains than their
more northerly cousins. The researchers estimated it
would take approximately 40,000 years for a widespread
dietary adaptation to take place, so it would seem
that the Romans would have, maybe, a 6000 year
headstart on us "northerners"?

Minor differences in food adaptations do not flaw the
paleo model any more than obvious food allergies do.
The paleo model can be adjusted for any number of
variables: from low to moderate carb; for more/less
fruit; for more/less meat; for different types of
veggies; and on and on. Viva la difference.
