I'm still a newbie to all this so I'm not sure if this is a reasonable
suggestion or not.  Emeril Lagasse has a recipe for making your own bacon
using honey and salt and pork belly.  The recipe is at
http://www.foodtv.com/remlive/01-24a.htm. I have not tried this, however I did
make the Pork Roulades on the same page, sans sauce and using olive oil
instead of butter and they were excellent.
