Well, I'm drinking (unfiltered) coffee though I think it's not
so healthy - i just enjoy though.
It's probably not very paleo - though various kinds of
drugs are IMO paleo, especially energetising ones (kat coca mate.. coffee).
What doesn't mean than one should take them nor that tey are healthy.

My father refuses unfiltered coffee because it's rising cholesterol levels,
as you quote. But this describes a very short term cholersterol elevation.
Maybe it comes from elevated cholesterol production.
But if the body should want to decrease cholesterol *deposits*,
shouldsn't it rise cholesterol in the blood for the purpose of
transportation?
Then the elevation would come from actual cholesterol reduction.

You mention elevated alanine aminotransferase (ALT).
Can you tell (or someone other medicide educated), which
*purpose* this enzyme has - indicating which function may be elevated?
Whereto does this transferase transport the alanine?
Searching the web i only found some secondary sources, mentioning elevated
ALT for diagnosage after a liver damage. But what does it do normally?

Lucky is he who doesn't have to worry about
