There's no reason you have to limit yourself to traditional "breakfast"  
foods.  Breakfast can include anything you might serve at any other meal.

My two kids sound similar to yours.  One likes boiled eggs, but has to be  
harassed to eat the yolks.  The other likes sunny side up, but burns out  
on eggs fairly quickly.  Both will eat bacon or sausage, though.  They're  
also fond of ham, turkey, and chicken.

Fruit generally works well, too.  One of my son's favorites is the "happy  
breakfast" -- three boiled eggs and a peeled banana, arranged on a plate  
so it resembles a smiley face.  :-)
