There is certainly a lot more sugar in the Neanderthin recipe for
barbecue sauce than there is in cured bacon.  In any case,
heating any food causes changes in molecular structure.  It's an
open question whether cooking makes foods un-paleo.  It seems
that most people on this list are not willing to take compliance
that far (I know *I'm* not).  So, the way I see it the same
caveats apply to bacon that apply to other cooked foods, and to
protein-sugar combinations in particular.  These are not banned
in Neanderthin but I suppose a case could be made that they
should be.  I only argue that anyone who is willing to eat cooked
protein-sugar foods in general should not object to the sugar in
bacon.
