Basically a matter of inference. Look at a table like

 http://www.monkeymatters.com/charts/Vegetables%20Carbohydrate%20Chart.htm

and cluster on Carbohydrates/Fiber, and see all the ratios for the
"good" stuff (2.0 to 3.0) vs the "bad" stuff (> 6.0 or much more).
