frying does produce trans-fatty acids from cis-fatty acids.  This is why
cooking should be done with butter.

This is false;  The reason some researchers believe that high heat cooking
produces trans-fats is because they tested the frying oil at fast food
joints that didn't use trans-fat frying oil.  The problem
being the food that was being cooked was already PRECOOKED in trans-fats
which then of course leaked into the frying oil.  Voila high heat produces
trans-fats.  Also think of this, if high heat produced trans-fats why would
corporations waste money on the expensive catalyst process?

If you wan't to question this check out Dr Enig's book Know Your Fats.
She has been a lipid biochemist for along time and has been against
trans-fats in the food supply pretty much since getting into the science of
lipids.  If heating oils possibly produced trans-fats she would definitely
be against it.
