Hi Paul,
I have also read "Life without bread" and was a little worried by the comments about autoimmune responses. I have MS.
However, I do find that following a low carb Paleo diet my MS is non-existent.
So, I'm not worrying too much about and just trying to stick to the way of eating that works for my body. It is hard though sometimes!!
