It isn't much of an issue if you get liver from organic, grass-fed animals
as they have relatively small amounts of toxins to deal with (environmental
stuff - air, radiation, etc.).  But it probably is an issue with
non-organic, grain-fed animals who usually have antibiotics and hormones,
etc. added to their feed.
