IMO, a lot of people have objected to Cordain's views re not eating much fat/cholesterol. Some Palaeoish gurus such as  Vilhjalmur Stefansson or Sally Fallon actually recommend huge amounts of (minimally-cooked) animal fats(unfortunately, Sally Fallon recommends fat-rich raw dairy as well, which is harmful, IMO, given its non-Palaeo origins).  I cured my own (decades-long)blocked sinus-problem by cutting out absolutely all dairy, raw or otherwise. 
 
As regards organ-meats, they are absolutely essential for health - in fact, ox-/beef-tongue is my favourite food, and I get sweetbreads now and again(though I don't much like the taste of the latter) . Native tribes generally prized all the organ-meats, eating such things as adrenals, kidneys, brains etc.  - organ-meats contain something like 10 to 100 times as many nutrients as muscle-meats which is very good reason to eat them.
 
While there are plenty of studies concerning the dangers of saturated fats, IMO, they tend to focus on cooked, grainfed meats rather than cooked,grassfed ones. Also, one study pointed out a strong possibility that the dangers re cooked meats may be primarily due to the AGES(advanced glycation endproducts) produced by heat/cooking:-

(I should add that healthy, grassfed meats, anyway, contains much less saturated fats than unhealthy, grainfed meats. So it's not so much a question of what type of fats to eat, whether PUFAs/MUFAs,SFAs, but whether you're getting them from a healthy source).
So raw saturated fat may be perfectly OK.
