I'm sorry to hear you are struggling so much!  Your intuition is leading you in the right direction - it sounds like your diet should focus on lean protein, vegetables and some fruit.  I know there is a lot of controversy on raw vs. steamed veggies, but from a nutritionist point of view, I can tell you that lightly steamed veggies are much easier to digest.  With the complications you are facing, I would stay away from raw veggies.  Your system is very sensitive right now.
 
For the candida, go to the health food store and get Pau D' Arco.  You can drink this in tea form or take a homeopathic remedy.  Ask the nutritional expert in the store or go to a naturopath.  I suffered with candida for years until I took the very same advice.  While you are dealing with the candida, it is best to limit your fruit intake also.
