Something to think about.  They score a very low number on the glycemic
index.  Lower than any of the root vegies as far as I can recall.
The real test is weather or not they cause me any problems, excessive water
retention, bloating, gas, loss of concentration etc..  If not they may be a
good alternative to rice.
